Utah Food Corps

The Utah Food Corps VISTA project shall expand existing hunger and food security efforts across multiple Utah higher education institutions while strengthening collaborations for the benefit of food insecure students and residents across Utah. VISTAs are needed at Salt Lake Community College, Utah State University, Utah Valley University, University of Utah, Weber State University, and Westminster College. The long-term intent of the Utah Food Corps VISTA project is to build capacity at each participating campus so that by the end of the third year of the project more ongoing student volunteer support, administrative support, cash, and in-kind funding are devoted to these efforts to make them sustainable and resilient in the face of increasing student need. Through continuous assessment and ongoing visibility efforts, the Utah Food Corps VISTA project shall also call more attention to sustainably address student hunger and food security issues. Member Duties : Utah Food Corps VISTA members shall: 1) Build capacity at each of campus community through VISTA service. 2) Recruit volunteers from campus communities to strengthen and sustain these capacity building efforts. 3) Provide self-sufficiency education to low income members of campus communities to address the root causes of hunger and food insecurity. 4) Provide continuous improvement of the program through assessment and tracking. 5) Share best practices and encourage further collaboration through monthly VISTA member group meetings led by the VISTA leader.
