M:STL- Victory Mission Fresher Food Program Manager VISTA
 
 
 
The Fresher Feeding Program diverts expiring and “ugly” produce from the landfill and repurposes it to address food insecurity in Springfield, Missouri. The Fresher Food Program Manager builds relationships with farmers, community gardeners, grocery stores, and food advocates so that more produce can be brought into Victory Mission’s supply chain. Once accepted into the commercial kitchen, the Fresher Food Program Manager will build systems for separating fresh and expiring produce. Fresh produce with a shelf life will be given out during evening meals and in the food pantry while expiring produce will be processed to add to its shelf life. The idea was inspired by Victory’s Street Chef when he took excess bananas from the pantry and made banana bread to pass out. This diverted browning bananas from the landfill. Banana bread was a low-barrier product because it is shelf stable. Other food products created through canning or other methods of preservation, require attention to detail to ensure food safety and nutritional quality. This is where the FRESHER VISTA comes in.

Member Duties : The Fresher Food Program Manager (VISTA) will be in charge of researching and creating a manual for processing food in accordance with better process control regulations, HACCP, and FDA laws. By the end of the program, the VISTA will have built the capacity needed for Victory to can, freeze, dehydrate, and bake expiring produce so it can be used by those in need. In addition to creating systems for managing food, the role will also focus on education and chronic disease alleviation. The combination of better food, cooking classes, nutritional guidance, and other things designed by the VISTA will reduce obesity, high blood pressure, and diabetes by creating access and changing harmful behaviors.
