Opportunity Council - Maple Alley Inn Summer VISTA
 
 
 
Maple Alley Inn meets the needs of the people it serves by focusing on highly nutritious and fresh ingredients combining to create delicious and satisfying meals. The National Health Care for the Homeless Council describes typical shelter meals for the homeless as high in fat, low in fiber, and inadequate in the provision of most nutrients. Maple Alley Inn turns this model of meal programming upside down by serving meals with quality protein, green salads, fruits and vegetables, whole grains and focuses on the reduction of sugar and sodium whenever possible. A volunteer run community garden supplies the bulk of the fresh herbs and vegetables used in the meals during peak seasons. A Summer VISTA will assist with the daily operations of this meal and garden program.

Member Duties : The Summer VISTA will assist the Program Coordinator with weekly meal planning, preparation and service. They will also play an integral role in coordinating and schedule the 50 kitchen volunteers who help make the meals possible. In the garden, the VISTA will help prepare garden beds and assist with planting, weeding and harvesting herbs and vegetable. They will also be responsible for processing harvested vegetables for immediate use and preserving for use throughout the year.
