Cold Climate Food Production Internship

The Center for Cold-Climate Food Security engages Western students through courses, internships, and class-based service-learning opportunities. The Sustainable Agriculture & Food Production internship grants students hands-on experience growing food in campus and community gardens. Using the Chipeta Garden and Gunnison Gardens as the classroom, interns are guided through the process of preparing and maintaining edible landscapes while learning the tactics of sustainable, small-scale vegetable production. Interns simultaneously practice self-discipline, time management, and teamwork as they nurture the campus gardens. The internship delivers tools for self-sufficiency while building skills for career pathways in food production. In addition to the personal and professional growth this experience offers, interns directly contribute to food security and community well-being in Gunnison. The produce grown by interns helps supply local food access programs and campus food initiatives, ensuring that fresh, healthy food reaches students and community members who need it most. By cultivating food in a high-elevation, cold-climate environment, interns also contribute to broader research and modeling efforts that support resilient food systems in rural and mountainous communities. Their service helps demonstrate what's possible in challenging climates, expanding what’s possible for local food sovereignty and sustainability.
