Campus Kitchen at Augsburg University works to make healthy food more accessible to students on campus and to our neighbors in Cedar Riverside. Campus Cupboard (Augsburg's student food pantry) has rapidly expanded in the last two years, in response to increased food insecurity among Augsburg’s diverse student population. Augsburg has, over the past decade, become a school that serves a student body that is more diverse and lower-income than any other schools in the state. The burden of food insecurity on students significantly affects their capacity to benefit from the educational opportunities in which they are investing. The VISTA's work will build capacity for Augsburg’s food access efforts focused on student food insecurity, and help to ensure its sustainability in the future. The VISTA member will develop and strengthen the infrastructure that supports the Campus Cupboard through expanded partnerships with food supply organizations. They will also create systems to ensure that low-income students know about and have easy access to the Cupboard. Additionally, they will conduct research to better evaluate the impact of the Campus Cupboard, the scope of food insecurity on campus, and to inform fundraising efforts to ensure sustainability. This project is part of the Community Corps VISTA Program, operated by Iowa & Minnesota Campus Compact. The program strives to eliminate poverty through campus-community partnerships by placing capacity building support in higher education and nonprofit organizations. ***Please also send cover letter and resume to supervisor. Member Duties : Strengthen and expand on the existing Campus Cupboard at Augsburg to improve services that better serve undergraduate students facing food insecurity. This involves daily operations at the Campus Cupboard, including reporting, systematizing tasks, and coordinating promotion of SNAP benefits referrals for students. Conduct research to evaluate the current impact of the Campus Cupboard and assess areas for improvement and additional unmet food insecurity among students. This involves creating surveys to gauge the current impacts and growth areas in Augsburg’s current campus food insecurity work; connecting and collaborating with the national and local networks of sustainability and campus food programs to learn about best practices. Develop communications materials for internal and external campus food programming and for external fundraising. This includes gathering data to support fundraising proposals; working with external partnerships and campus partners to seek new funding sources.
