Local Food Production and Outreach VISTA Summer Associate
 
 
 
In recent years, disasters, extreme weather, and the COVID-19 pandemic have impacted Nebraskans’ ways of life. For vulnerable populations, facing such events can result in reduced income, limited access to food and services, and increased stress. The mission of Nebraska Extension is “Helping Nebraskans enhance their lives through research-based education.” We are the public outreach and engagement branch of the University of Nebraska-Lincoln, and we develop and deliver meaningful educational resources and experiences to people of all ages. The Local Food Production and Outreach VISTA Summer Associate will perform direct service activities related to the production of fresh fruits and vegetables to meet the needs of low-income communities and reduce food access disparities caused by COVID-19, income inequalities, and racial inequality in Omaha. The VISTA Summer Associate will support us and our partner organizations to increase fruit and vegetable production capacity at Cooper Farm for distribution and to assist refugees and immigrant farmers in growing and selling fresh produce. Additionally, the Associate will assist in evaluating, curating and developing educational resources to enhance learning for growers at the farm and other beginning farmers. Our ideal member is ready to tackle exciting challenges, able to think critically and identify creative ways to solve problems, has a can-do attitude, enjoys the outdoors, and likes working independently and in a team setting. The VISTA Summer Associate will serve at Cooper Farm and collaborate with us, our partners, VISTA peers, and the farmers growing produce at farm. The start date is 06/07/2021, and the end date is 08/13/2021. This position is located in Omaha, which is a vibrant community with plenty to offer in the arts, recreation, education, and culture. Member Duties : The Local Food Production and Outreach VISTA Summer Associate will be part of our Omaha team and will perform direct service activities related to the production of fresh fruits and vegetables to meet the needs of low-income communities and reduce food access disparities caused by COVID-19, income inequalities, and racial inequality. The VISTA Summer Associate will support us and our partner organizations to increase fruit and vegetable production capacity at Cooper Farm for distribution and to assist refugees and immigrant farmers in growing and selling fresh produce. Specifically, the VISTA Summer Associate will serve at Cooper Farm and collaborate with us, our partners, VISTA peers, and the farmers growing produce at farm; take care of the gardens; prepare produce for market and assist at farmer’s markets; evaluate, curate, and develop social and digital education and marketing tools; and coordinate produce donations to local food pantries.
